Tips for a Slimmer T-Day Dinner


When it comes to the turkey say good bye to the thighs! The dark meat has almost twice the amount of fat as the breast meat.

Turkey breasts and thighs vary moderately when it comes to calories. A 3-ounce serving of breasts contains 170 calories, while this same amount of thigh contains 210 calories. In similar fashion to carb content, the calories will change if you apply some form of sauce or topping to the turkey. Skip teh gravy – it’s just fat and white flour. Here’s a hint – if you brine the turkey before cooking it will be juicy and not need any gravy! Gravy equals about 100 calories a serving and it’s mostly sodium.

Yo just saved about 150 calories! We’re down to about 2600 calories and dropping! Remember it’s important to plan ahead! And for a juicier turkey - brine it! See brinng below.

How to brine a turkey from my favorite chef Alton Brown

  • 1 (14 to 16 pound) frozen young turkey

For the brine:


  • 1 cup kosher salt
  • 1/2 cup light brown sugar
  • 1 gallon vegetable stock
  • 1 tablespoon black peppercorns
  • 1 1/2 teaspoons allspice berries
  • 1 1/2 teaspoons chopped candied ginger
  • 1 gallon heavily iced water

For the aromatics:


  • 1 red apple, sliced
  • 1/2 onion, sliced
  • 1 cinnamon stick
  • 1 cup water
  • 4 sprigs rosemary
  • 6 leaves sage
  • Canola oil

2 to 3 days before roasting:

Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.

Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate.

Early on the day or the night before you'd like to eat:

Combine the brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining.

Preheat the oven to 500 degrees F. Remove the bird from brine and rinse inside and out with cold water. Discard the brine.

Place the bird on roasting rack inside a half sheet pan and pat dry with paper towels.

Combine the apple, onion, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.

Roast the turkey on lowest level of the oven at 500 degrees F for 30 minutes. Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees F. Set the thermometer alarm (if available) to 161 degrees F. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let the turkey rest, loosely covered with foil or a large mixing bowl for 15 minutes before carving.

Tips for a Slimmer T-Day Dinner


Skip the cranberry sauce. A half cup serving has the equvaliant of a candy bar's worth of sugar. Fresh cranberries are low calorie and high in fiber. Here is my favorite recipe. Make it  head. If you are going as a guest offer to bring it.
Thanksgivng dinner is now about 100 calories lighter! With pumpkin pie as your dessert choice the 3000 calorie meal is now down to 2750. Stay with me for more tips to a slimmer T-day dinner!

Cranberry Orange Relish

Ingredients:

·         1 12oz. bag of cranberries

·         4 oranges cut off ends and slice with peels still on

·        ONE packet of Stevia(herbal sweetener) or 1 tablespoon of sugar
Add a handfull of shelled halved walnuts

Directions:

Place all ingredients in a food processor, chop well and chill for 24 hours. Place on top of fresh parsley for decoration.

May be stored in refrigerator for up to 2 weeks.

Eating tips from healthy skinny chicks


– skinny chicks, no matter what they tell you, don’t eat whatever they want, exercise very little and stay slim. What they do is exercise every day and use a few eating tips that cut calories without cutting out the food they enjoy. Here is a couple of my favorite.

Green tea- ups metabolism

 Dark Chocolate- a healthy sweet that also increases you metabolism

Wine- piceatannol a compound your body makes when you drink wine could stunt fat cells – says Journal of Biological Chemistry but remember that’s one glass on wine not the whole bottle!

NO PLEASE don’t pass the bread and butter- extra wasted calories

Salad first and lots of it with dressing on the side- dip your fork in the dressing and then spear some salad- 

Water, coffee, tea, but never juice or soda- stay hydrated without extra sugar

Eat your fruit don’t drink it- takes longer and you get lots of fiber to help fill you up

 Eat soup-A study out of Penn State showed that soup eater end up weighing less than non-soup eaters

Portion control - did you know you can eat anything you like if you use portion control – moderation! It’s not what you eat but how much you eat that counts.

 Healthy Skinny chicks also exercise daily, laugh, love and have lots of fun!

A Recipe for Sex -- French Kiss

The French are known for many things among them the French kiss. It was the Greeks and Greek mythology that first invented the kiss of the tongues. Zeus became angry with Erato the muse of love and poetry and punished her by forcing her to kiss all men that she met with the tip of her tongue.  This wa a punishment that she distasted. Eventually she met and fell in love with a man who she lovingly kissed with the tip of her tongue. When their tongues met their souls were kissed. The French perfected this kiss and called it the “soul” kiss. Leave it to the French to drop themselves of the puritanical burden and perfect the art of a sexy kiss.

Besides French kissing and Paris, the French have Provence located in Southeastern France. It is home to many herbs among them lavender, thyme, basil and fennel. These herbs were picked fresh from the garden and used in cooking stews and to season meats and fish.

In the 11th and 12th Century, known as the Golden Age in Provence the troubadours broke away from the Latin influence and began to compose love songs and poetry of their own. The most famous troubadour was Folquet de Marseille whose love songs were famous throughout Europe and who was praised by Danti in the Divine Comedy.

Provence has always attracted writers and artist such as Edith Wharton, Summerset Maugham, F. Scott Fitzgerald, Cézanne, Renoir and Matisse.

The cuisine of Provence is a result of the warm Mediterranean climate although the terrain is rugged making it difficult to grow produce. Hearty vegetables, goats, cheeses and fish are stables of the diet. Bouillabaisse and ratatouille come from Provence.

The native drink is Pastis, liquor that is flavored with anise. But what does this all have to do with sex and French kissing? Just smell the fragrant air with blossoming herbs of thyme, basil, fennel and lavender. Each scent relaxes, invites and excites the senses. That’s why the French created Herbs de Provence, a mixture of these aromatic herbs to tempt the body, the mind and the soul. They touch the body with nutrients such as the B-complex and vitamins A, C, and D all known to support a healthy sex system. Fennel has been used to increase the libido in both men and women. Basil was used as a dusting powder to attract lovers because of its erotic scent.

 All of these herbs, basil, thyme, fennel and lavender belong to the Labiatae family Labiatae herbs are culinary which indicate their affinity for digestive processes. The scent of these wonderful herbs is invigorating, stimulating, fiery and reawakening; making them an excellent combination for stimulating the sexual urges.

Herbs and their essence touch the soul in the same way a French kiss excites the tip of the tongue with a subtle force that brings the art of cuisine and love making to perfection.

Halloween HealthyChocolateTreat Recipe only 75 calories


A Recipe for Health, Sex, Happiness and Love all wrapped in one!

I’ve been invited to a party and asked to bring a dessert so it’s a good excuse to make something form the cookbook that I haven’t made in years. Indulge me if you will as we explore how these little morsels can delight us with health, sex, happiness an love.

When it comes to health, cocoa springs to the top of the list. By now we all know that the coca bean is a rich source of antioxidants. Antioxidants are scavengers that seek out and destroy rfre radicals that circulate in our body and do damage to our cells. Now it’s the pure coca that is the good stuff and not the commercial chocolate that is mostly sugar, cream and additives. Cocoa is very bitter and so we add sugar to most recipes to sweeten it. Don’t cringe from the sugar. A little sugar in pure form added to home baked desserts is not a “bad” thing. Sugar becomes a “bad” thing when we eat it commercially in sodas and baked goods that are made of preservatives and processed foodstuff.

In fact the World Health Organization did several studies that show it s not the sugar that is the problem when it comes to obesity, diabetes and tooth decay, but rather the amount of soft drinks and junk food we consume. Of course, sugar usually is associated with rich desserts and candy and overindulging in both of those can led to health problems. The key with sugar is moderation.

Now when it comes to sex pure cocoa can be a tempting aphrodisiac. Pure cocoa has been found to contain a substance called phenythylamine or PEA, which is the same peptide that the body produces when it gets that rush of affectionate feelings. Pea is an amphetamine like bio- chemistry rush that causes humans to get excited. But, remember when we talk about cocoa being an aphrodisiac we’re talking about the real stuff. Adding rich dark coca to foods may give a mild jolt of excitement.

Crème de cocoa is mixture of cocoa, vanilla and liquor. Although it is used as an after dinner drink it is also used in baking desserts. In the early 19th century, a recipe for making chocolate liquor features cacao beans, vanilla, vodka and simple syrup. Glycerin may have been added to keep the extract suspended and to make the liquor thicker. If we mix a little chocolate, vanilla and liquor together, it’s sure to get a smile. After a great meal a cordial of crème de coca can make one feel quite happy.

One of the symbols of love is a box of chocolates. It is aid that a young man brings young woman chocolates so that he might partake of her affection. A box of heart shaped chocolates on Valentine’s Day is a sure fired symbol of love. And of course there are those who love chocolate and must have their daily fix of this sinful delight. If you sweeten it with sugar and a little cinnamon it leads to sugar and spice and something nice and that is what love is made of…or so they say.

I’ll add little Neufchatel cheese – the light healthy French version of cream cheeses and make my little desserts to take to a summer backyard party where we will indulge in something healthy, sexy, happy and loving.

Chocolate Cheesecake Cups

What you’ll need to make about 30 small cupcakes

Two  - one dozen small size cupcake pans 

Cup cake liners - small

1 8ounce package of Neufchatel cheese ( can use light cream cheese)

½ cup sugar

½ cup low-cal or nonfat cottage cheese

2 tablespoons of flour

2 tablespoons of cocoa

3 tablespoons of crème de cocoa – Godiva Chocolate liquor – Bailey’s Irish crème or Crème de Menthe

½ tsp vanilla extract

2 egg whites

Chocolate chip morsels

Place first 8 ingredients in food processor and blend. Spoon into paper lines cupcake tin. Fill half full. Top with 3-4 chocolate chips. Bake at 300 degrees for 20 minutes. Cool on rack and then chill for at least 2 hours. Freeze if you like and serve as a frozen cupcake – taste like a chocolate ice cream!

Yields 1 dozen at approximately 75 calories a piece. Now that’s a health, sexy, happy, loving, sweet indulgence!

So Pluto got into trouble because he was so infatuated with mintha.  Seems that Mintha or better known as mint is a mild stimualant that is good for the digestive system and will sightly increase your metabolism. It's all about what we focus on that brings about results.

Diets fail because we only attempt to correct the problem on the physical level.  We neglect the real issue which is found in the mental and spiritual relm. Affirmations don't work becasue we don't go to the spiritual level and examine closely just what is holding us back from showing up and fully participating in life. Anyone who has achieved will tell you it came from a spiritual push. It is an energy much more powerful than the body-mind. Create!

 Peas with Mint

A great side dish that is both healthy and sexy. Peas are one of the most nutritious leguminous vegetable, rich in health benefiting phyto-nutrients, minerals, vitamins and anti-oxidants. Add a little mint for arousal and you’ve got a great healthy and sexy side dish!

 

Sauté in a rounded tablespoon of butter thinly sliced onion rings. When onion is soft add 2 tablespoons of water and one cup of fresh peas. Sauté until peas are tender. Remove from heat and toss in several small sprigs of fresh mint. Serve warm. No wonder Pluto fell in love with Mintha!

Because Life becomes what life does

This is a new series of blog post. It's about motivation, achievement and success. In any endeavor there are certain ingredients that are required if we are to succeed. Like everyone else I have failed and succeeded. My failures have been valuable lessons. My successes have come after much work, sacrafice and devotion. But like most people I have not always appreciated my successes but, rather tended to focus on my failures. We are afterall our most ardent critics.

We tend to measure our success by the accummulation of things, praises, honors and attention. When success comes without material respresentation we forget the true nature of success. It lies deep within our abilty to be happy and at peace. It lies at the depth of self worth and self esteem. That is why many people accummulate large masses of wealth and still find themselves unhappy. It is not success they have achieved but, the amassing of stuff to compensate for a lack of worth. No amount of wealth can bring you worth.

One of the biggest forms of failure is the diet industry. Diet programs promise us quick loss, happiness and success. It is a $10 Billion a year business, resulting in a 95% failure rate. Why? The deprivation factor and that is exactly the reason most endeavors fail. We feel deprived of time, energy, fun and play. To succeed at anything means to committ, work and focus on the end goal. It means to continue even when the going gets rough.

I wrote the Twelve Lessons for success and then recorded them on an audio CD. Contained within is teh formula and the steps that will lead to success no matter what the endeavor. Here is the first secret; consistancy and persistancy. If applied will lead to success. The problem is we as humans have a tendnecy to give up as soon as the going gets rough or we feel deprived. By nature we want life to be easy. You cannot succeed without working. It is the basic law of Karma - you reap what you sow.
What is needed is an integrated approach where body, mind and spirit work together. Integration is a conscious approach to the choices we make. Our choices are actually a reflection of the connection we hold with our spiritual self. The flesh is weak and the mind is so easily untamed. The spirit moves mountains. So perhaps we need to look at the spiritual componant before embarking upon another diet plan, another business plan or any other plan that promises physical gratification at the cost of emotional and spiritual harmony and bliss. In the spiritual realm one is never deprived...to be continued.

Camponata

When we think camponata we think Sicily. After returning from Sicily I decide to entertain my friends with an antipasto and wine afternoon featuring camponata. Here is the secret to a good camponata...the main ingredient is eggplant. You need to fry them lightly so to make sure the oil is hot enough. One lonely eggplant slice is dropped into the pan and you wait for it to begin to sizzle before you add the main stock to be lightly fried. Give up one slice for the pot! You don't want any one ingredient to get lost nor do you want anyone ingredient to over power the rest. There needs to be the right balance and the right blend and that is the secret to a great camponata. Just like life - the right balance and the right blend and you have greatness!

ASuccessful Life

A Successful Life – To Appreciate Beauty – and so it has been said beauty is in the eye of the beholder. Or as Yogis put it – you and you alone bring the beauty to the sunrise and the sunset.  I live in Los Angles where beauty is seen as a trademark of success. But the superficial, stereotypical beauty is not what I see around me every day.  When I teach my yoga classes I meet and share time with some of the most beautiful people in the world.  Their smiles, eyes, complexions, hair, movements and laughter are the most beautiful parts of my day. I live in the city where the beauty of nature can be hard to find but, the same sun rises and the same sun sets every day and every day I marvel at the beauty of the world to wake up and go to sleep with such precision while coloring the sky with a blaze of orange, pink and yellow. Beauty is in the eyes of the beholder and can be found anywhere and anytime.  It does not have a fixed definition. It is up to you to define it. What do you see as beauty today?

Shoes

It is Wednesday. We leave on Saturday and the shoes I ordered for the trip arrived and are too small. Ran to norstroms and only have them on line. Takes 5 days to get them. Went home and went to zappo who made me a VIP and will ship them and have them to me by Friday. Wow! I am now a zappo fan.

Italy Count Down

Only four days until we leave for Italy. I am packed, organized and with most of my work done.  There is always things that won't get done and snafus that happen.  Like my husband contracted a flesh eating bacteria and is now on antibiotics to clear it up so we can travel. Surprisingly this is a common event but, still very serious. So four days to go we are watching our health and ready to embark upon another adventure. A couple of quick lunches with friends, last minute shopping for a good pair of walking shoes, last minute work details and off we go.

Want a healthy sexy dessert for Valentine’s Day?

Baked Apples

Apples are known as a great digestive aid as well as for their healthy nutrient content. Apples contain more vitamin G (the “appetite vitamin” promotes digestion and growth) than almost any other fruit.

Cinnamon, nutmeg and vanilla are known for their aphrodisiac qualities; mostly due to the warming of the circulation system. It takes good digestion of good nutrients and proper circulation to keep the sex juices flowing and the body-mind healthy. So if you want to be healthy and sexy this Valentine ’s Day try baking apples for dessert.

Ingredients: for 2

½ teaspoon of cinnamon

¼ teaspoon of nutmeg

¼ cup of raw sugar (use Stevia if you want to reduce calories)

1 tablespoon of cold butter cut in pieces

½ cup apple juice

2 medium size apples

1 vanilla bean cut into two pieces

Preheat over to 325

Combine cinnamon, nutmeg and sugar in small bowl and set aside. Core the two apples and remove the skin from around ½ inched at the opening of the cored apples. Fill each cavity with the sugar and spice mixture. Top with ½ of the vanilla bean. Top each apple with half the tablespoon of butter. Place the apples in a baking dish and pour the apple juice around then. Cover the pan with aluminum foil and bake for approximately 45 minutes. Remove from the pan and serve warm with a side of vanilla ice cream.

Did you know that honey is an aphrodisiac? Honey is a complete food used throughout history for its ability to supply energy and nutrients. When tested against other foods it ranked number one for sustaining performance and quick recovery. Sounds like an aphrodisiac to me!  So how about a honey cake for your honey sprinkled with aphrodisiacs spices and erotic wine for Valentine’s Day?

Honey Cake

Serving honey is an ancient way of honoring guests.

1/2 cup of honey

1/2 cup of Strega wine (or any sweet white wine, but Strega is best)                 

5 egg yolks

7 egg whites

1½ teaspoons of salt

1 tablespoon of grated orange peel

1/2 cup plus 2 tablespoons olive oil

1 cup whole wheat flour

1/2 teaspoon each of cinnamon, cloves,

      and nutmeg

Preheat oven to 375 degrees.

Line the bottom of an 8-inch spring-form pan with oiled parchment or a brown paper bag cut to size. Oil the pan and paper well.

 Whisk egg yolks with honey for five minutes. Add orange peel. Sift flour with salt and spices. Gradually stir into egg yolks and honey mixture. Add wine and olive oil, stirring constantly as you add small amounts. Beat the egg whites until stiff and then fold into batter. Pour batter into pan and bake for 20 minutes. Turn oven off and let cake sit for 10 minutes. Remove cake from oven. Turnover and detach from spring pan carefully.

Sprinkle top with a mixture of cinnamon and ground dark chocolate. Serve with a side of orange sorbet.

A Recipe for Health- A Melodic Composition

Fruit compote is a 17th century French desert made up of fresh slightly cooked fruits. It is seasons with orange, lemon, vanilla, cinnamon and cloves. Many Jewish people associate it with holidays. The fruit compote served on holidays is supposed to indicate sweet wishes and good luck in the coming year.

The base of fruit compote is, of course, the fruit. Some variants use dried fruit while others may make berry compote. Some fruit compotes follow a theme, such as tropical compote, while others use preserved fruits in syrup from the summer, or an assortment of whatever looks good. Depending on the type of fruit used, the spicing and level of sweetness is usually adjusted to make the fruit compote's flavor optimal.

Whatever the fruit this is a healthy dessert that packs a punch when it comes to antioxidants. That’s because fruit is a great source of antioxidants, vitamins and minerals. Some of the fruits used are pineapple, peaches, pears, apples, apricots, cherries and berries.

When I was young we lived on an Island off the coast of Maine. It was difficult to get fresh fruit and vegetables in the long winter months. So in the summer my Mother would can fresh fruits so she could make fruit desserts in the winter. Traditionally canned or preserved fruits were used to make compote.

Fruits were first discovered wild. Humans no doubt liked the look, then the smell and finally the taste. Eventually humans began to cultivate fruits and thus began early farming. Today we enjoy a vast variety of fruits from around the world; however there is nothing better than tree or vine ripened, in season, locally grown fruit. It has a sweetness and texture that just doesn’t exist with half ripened, imported, out of season fruit.

Fruits contain essential vitamins and minerals needed for good health. It’s important to get fresh whole fruits because the vitamins and minerals in fruits have a synergistic effect meaning that they work together to product the greatest amount of health benefits. For example; oranges are rich in vitamin C but to get the vitamin C you need a bit of the fleshy white stuff(bioflavonoid) which synergizes with the Vitamin C, delivering the maximum amount of nutrients.

When you mix a variety of fruits together in a fruit salad or compote you get both a wonderful collage of flavors and a healthy portion of nutrients. We need to get three to four servings of fruits a day and sadly most Americans get little to none. The fiber, the skin, the seeds and the pulp of fresh fruits are a far better choice than fruit strips or fruit juice which is often times missing essential nutrients and loaded up with sugar.

There’s nothing like compote of fruits to make for a healthy melodic composition.

For dessert its fresh homemade fruit compote. Your choice of fruit but I chose:

1 pear ripened

2 peaches ripened

3 black apricots soft and ripened

1-     ½ cup unsweetened apple sauce

¼ cup of brown sugar

¼ cup of uncooked oatmeal or any other dry cereal

A few dabs of butter

In a bowl combine the first four ingredients. Mix well and turn into a square baking dish coated with cooking spray. Sprinkle sugar, oatmeal on top and dab small amount of butter randomly on top. Cover and bake at 350 degrees for 40 minutes. Serve warm.

Yoga Pose to Manage Stress

The stress response involves the sympathetic nervous system and then the para sympathetic nervous system bringing us back to homeostasis. The nervous system is essential to help us deal with the stressors of life but if we let it get out of balance we subject ourselves to ill health. The half boat pose in yoga stimulates the nervous system to respond and to relax in such a way that it consciously teaches us how to manage stress. Lay flat on your back with your arms at your side. Take in a deep breath and lift your arms, legs, neck and head off from the mat and stare at your toes. Hold for a few seconds and then release the breath and your body back to the mat relaxing your muslces. Repeat for three to five times.
Stress exist. We can not avoid it but we can learrn to manage it effectively. Yoga is a great practice when it comes to managing stress.

Aero*boga - A New Year Lesson 1

Following the yoga path of Bhakti yoga aero*boga combines yoga and simple aerobic dance moves to open, energize and connect the sacral and heart chakras There are 12 lessons that we will explore on our way to self discovery, the nature of relationships and the cultivation of authentic love. This is lesson one. It is best to repeat this lesson for a month. Even if you only do Aero*boga once a week, for a month you will discover something of value.   It is about relationships; the most fundamental and the most complex thing we do…relate to everything and everyone within our world.

It is the spiritual essence of the love that connects us. This fundamental essence is a part of all of us. Authentic love is what unifies us. Love means to merge with another. At the highest level of being we are all united.

A Recipe for Health - Build me up buttermilk

Buttermilk is not really buttermilk but the milk that is left behind when butter is made. It’s also referred to as fermented milk and used in many cultures both as a drink and as milk for cooking. It is a tart drink that gets it tartness due to the presence of acid in the milk. The acidity is primarily due to lactic acid, a byproduct produced by lactic acid bacteria while fermenting lactose, the sugar found in milk.

Buttermilk can be found in the grocery store, however it usually comes in a large container so if you need just a small amount for making pancakes or a cake; add  1 Tablespoon of white vinegar, apple cider vinegar or fresh squeezed lemon to a cup of milk and let sit for five minutes.

So is fermented, lactic acid, tartness good for us? Buttermilk has less fat than milk because the fat has been removed to make butter. It is also high in potassium, vitamin B12, calcium, and riboflavin as well as a good source of phosphorus. Buttermilk is a probiotic food source. The “good” bacterium in buttermilk passes through the digestive system where the bacterium becomes active. These healthy bacteria thrive off the lactose or sugar that is found in our intestines. The good bacterium, boost the immune system, gives us energy, improves digestion, makes vitamins, protects against carcinogens and protects against cardiovascular disease.

Butter milk is known to have been used by the ancient Hindus up to 5000 years ago. At that time butter was so precious that it was used as currency, making butter milk also quite valuable. Irish folklore claims a glass of buttermilk will cure a hangover. Heat a cup with a clove of garlic and it is known to cure a variety of ailments or perhaps taste so bad it will make you forget about your other ailments.

According to American folklore immunity from poison oak or ivy can be established by drinking buttermilk. Pioneer women used buttermilk on their face to make their skin smooth. This is not too far off as the acid in the milk in known to soften skin.

In terms of health the digestive system says it all. Every part of your body-mind thrives because of the digestive system. Nutrients are digested and then distributed throughout the body to nourish and support life. When the digestive system is not working properly the body cannot receive the nutrients it needs to produce health. Buttermilk is a natural and healthy aid to the digestive system and at the same time supplies a rich source of calcium, vitamin B12, riboflavin and potassium.

Riboflavin or B2 plays a key role in energy metabolism and the metabolism of fats, carbohydrate and proteins. Buttermilk is a good source of this essential vitamin. Calcium supports bones growth, vitamin B12’s key role is the functioning of the brain and the nervous system, potassium is necessary for the functioning of cells and phosphorous is a component of phospholips that form all cell membranes.

So build me up buttermilk. Never let me down because I need you so badly to keep me healthy and my skin so smooth.

From our thoughts this energy moves into words and actions .Therefore the first place to establish non-violence is within our mind.

This practice brings good karma into your life, it brings non-agitation of the mind and it magically and mystically draws into your life non-violent people and events. Your life becomes filled with happiness. So take in a deep breath and quiet the mind. The more you quiet the mind the calmer and more non-violent are your thoughts.

When we exercise we use our physical muscles. In a relationship we have an opportunity to use our emotions muscles; the muscle of letting go, opening up and accepting. As we use these emotional muscles more and more each day we enhance our ability to exercise these traits in every aspect of our life. To make a sacred vessel of our relationships we must first make clear our intentions. Openness is required – this means we should be open to other people and to new opportunities. Trust is also necessary – trust in ourselves, others and our ability to self realize. We also need energy to keep us focused and committed to maintaining and nurturing our relationships. And finally we must be willing to connect the ability to give and receive with the ability to love. These physical and emotional exercises create a strong vessel from which we find the strength to transform our love into unconditional compassion and understanding.

A Recipe for Health, Sex, Happiness and Love – Spicy Apple sauce Cake

The Phoenicians the Egyptians and the Romans did it so can we- bake a spicy, fruit, sweet cake full of health, sexuality, happiness and love.

Spray a square or tube baking pan with cooking spray and dust with powder and set aside. Preheat the oven to 350 degrees

Ingredients

¼ cup of buttermilk – if you don’t have butter milk add 1 tablespoon of apple cider vinegar to skim milk

¾ cup of light brown sugar

4 egg whites

Sift together;

2 cups of flour

1 tablespoon of carob powder

1 teaspoon of baking soda

1 teaspoon of cinnamon

1 teaspoon of ground cloves

Set aside;

1 cup of unsweetened apple sauce

½ cup raisins or another dried fruit

1 tablespoon of olive oil and 1 tablespoon of honey

In a bowl combine buttermilk and sugar and mix well. Stir and mix in 4 egg whites. Add the applesauce, olive oil and honey. Gradually add in the flour mixture. Mix well. Stir in the raisins or any other dried fruit that you desire. Also you can add nuts. Mix well, pour into baking pan and cook for 30 minutes or until cake is done. Turn out onto a cooling rack.

We spend a great deal of time trying to control one another so that we can get what we want. But rather than judging ourselves, it is wiser to first try and admit within our self this human tendency to want to control others. Then let us set about the work of transforming this controlling ego of ours into an observant being that releases itself from the need to control and hang onto attachments by surrendering to the purity of authentic, unconditional love. This can only be done when we open, energize and connect the ability to give and receive with the ability to reach out with authentic love.

True love is like friendship at its best – a love that does not need control or understanding – it simply exist.

A recipe for Health, Sex, Happiness and Love

Chicken in Honey Mustard Orange sauce with Braised Leeks

Start with the braised leeks

Preheat oven to 400 degrees

Trim 5 medium leeks diagonally to create angled tips

Heat large pan with about 1/3 cup of olive oil. Place leeks cut side down in pan and cook for 4-5 minutes. Turn leeks over and cook for another 3-4 minutes. Remove to a baking dish and line the baking dish with a  single layer of the leeks. Add a little more olive oil to the pan and reheat. Sauté 2 shallots sliced and 1 tbsp of thyme leaves. Cook shallots about 5 minutes and then add 1/3 cup of white wine, cook and reduce by half. Add about 1 cup of chicken stock and bring to a boil. Scatter thyme sprigs and one lemon thinly sliced over leeks in baking dish. Add wine stock liquid to leeks covering leeks to about 2/3, cover and bake for 45-60 minutes. Remove and let cool to room temperature.

Whisk together 2 tablespoons of Dijon mustard, a tablespoon of red wine vinegar, 1 teaspoon of lemon juice and 1 teaspoon of water.

Coat a serving dish with the Dijon vinaigrette and arrant leeks on top. Scatter with cooked lemon slices and 1 small chopped hard cooked egg. Serves 4

Chicken in Honey Mustard orange Sauce

Serves 4 – 183 calories each

2 tsp olive oil

1 tablespoon of white wine

4 - 3 oz skinless chicken breast or chicken thighs

1 cup of cooked brown rice

Sauce ingredients

103/4 oz can of nonfat cram of chicken soup

1/3 cup unsweetened orange juice

1 tsp of honey

1 Tbs of Dijon mustard

Dash of red pepper

Combine oil and wine in large skillet. Place chicken in skillet and cook over medium heat for 10 minutes or until brown on both sides. Remove chicken from skillet and defat liquid with a spoon. Add sauce ingredients to skillet; bring to a boil, add chicken, reduce heat and simmer for five minutes or until chicken is no longer pink. Serve with rice and garnish with orange slices.

Arrange the leek platter into the center of the table to serve family style.

Serve with a good California Chardonnay which works well with this dish.

For dessert a light Berry Parfait

Fill half way parfait or dessert cups with vanilla non-fat Greek yogurt. Top with sliced fruit such as berries or cherries; topped with a shaving of dark chocolate.

Aero*boga 11 dancing on the razors edge

The razors edge is the sharp point of the present moment. It means to embrace in the moment all we are as humans. After a fight with my partner, my child, my coworker, my parent, sibling or friend, part of me wants to nurse my anger and part of me wants to drop it and express my love. Slipping into uncertainty we must come back to the present moment. Being angry while loving someone is painful. Yet at these moments we have the opportunity to experience what it is like to be human – we have these emotions; we do not need to deny them nor do we need to feed them – we only need to slip back into the present moment without settling into any position and let the moment unfold – here on the razor’s edge we can feel the pain without settling into a hard and fixed position – here we understand what it means to be human – we all share the same emotions and the same fears. When this happens the heart opens and with a large flow of love we are able to once again give and receive free of attachment to any point of view.

A recipe for Health, sex, happiness and love

Moroccan Stew

A tagine is a North African stew and also the name of the pot which the stew is made. To make this dish you will need a tagine. You can buy one on line or at any good quality cooking store. Once you start using it, you will use it over and over again. Make sure you prepare it according to the directions – oil and slow cook. It is so easy to use and easy to clean.

To balance the sweetness of a fruit tagine start with a simple carrot salad

Shredded carrot salad

Whisk together about a tablespoon of Dijon mustard and about a  2 tablespoon of olive oil.

 In a  mixing bowl

2 cups of shredded carrots

1 cup of shredded cabbage

Toss in a handful of  dark currants or dark raisins

Toss in a handful of chopped parsley

Add dressing and toss – serve as starter salad or as a side dish.



This is my husband’s favorite tagine. It’s made with lamb, fruit and spices.

Lamb tagine with prunes, apricots and honey

1-2 tablespoons of olive oil

2 tablespoons of blanched almonds

1 large red onion finely chopped

2 cloves of garlic finely chopped

1 medium size carrot cut into bite size pieces

1 thumb size piece of fresh ginger peeled and chopped

A pinch of saffron threads

2 cinnamon sticks

11/2 teaspoons of coriander seed crushed

1 lb of lamb, form the shoulder, leg or shank, trimmed a dn cubed( I prefer the shank)

15 pitted prunes soaked for one hour and drained

 10 dried apricots soaked for one hour and drained

6 strips of un-waxed orange peel

2 tablespoons of dark honey

A little seas salt and ground black pepper

A handful of fresh cilantro leaves finely chopped

Heat the oil in a tangine (can use a heavy based casserole dish),stir in the almonds and cook until tender. Add onion and garlic and sauté until they begin to color. Stir in saffron, ginger, cinnamon sticks and coriander seeds. Toss in the lamb and carrot making sure they get coated with all the spices. Sauté of about 2 minutes

Pour in enough water to just cover the meat and bring it to a boil. Reduce heat, cover the tagine with the top and simmer for about 1 hour until the meat is tender. Add the prunes, apricots and orange peel, cover and simmer for about 15-20 minutes. Stir in the honey, season with salt and pepper, cover and simmer for another 10 minutes. Make sure there is enough liquid in the pot so that the sauce is syrupy and slightly caramelized but not dry.

Sprinkle in some cilantro leaves and leave the rest to sprinkle over the top of the dish. Serve immediately with a side of couscous or with crusty bread.

Serve with a good red French wine such as Bordeaux. Morocco has a big French influence us a French wine goes well with Moroccan food.

For dessert you might want to make it a light sorbet. Lemon and a French macaroon for sweetness. My favorite macaroons – outside Lauderee’ in Paris where I first had them back in 2001 is Paulette’s. The Way of the Heart – the nature of relationship, devotion and love

When we speak of walking the middle way – Buddhism refers to it as the razor’s edge. The middle way is about not getting attached or fixed into any one position. If we fall into identification with any position; wanting more closeness or separateness; wanting our freedom or wanting commitment we risk hurting ourselves, because we give more energy to one part of ourselves at the expense of the other. The way of the heart is balanced, centered and present. In order to maintain balance in our lives we need to continually come back to the present moment which is sharp and thin as the razors edge.

When we open, energize and connect in the present moment we find balance and all our relationships take on a new meaning. For in the present moment our relationships have the potential to renew and begin fresh; open, energize and connect – don’t get stuck in any position hanging onto resentments of the past or fearing the uncertainty of the future - but stay present and all your relationships will find balance.

A recipe for Health, Sex, Happiness and Love

This dinner contains foods that enhance your health, sex, happiness and Love!
Many foods bring back memories. Shrimp take me back to the small fishing village, where I grew up. In the winter the fishermen would catch fresh shrimp. Fresh and cold from the icy winter waters of Maine we would shell them, cook them and eat them not as a luxury but as an everyday staple.

Tonight’s dinner – Mango Shrimp

The meal begins with a simple salad made of love by a Pink lady apple. Arrange fresh endives on a chilled plate. Slice one Pink Lady apple into quarters. Slice the quarters into slivers and arrange on top of the endives. Cut into small chunks manchego – a Spanish cheese that works well with the apples. You can also use a Romano cheese. Any cheese will work but keep it on the mild side. Sprinkle the top with slivered almonds.

Mix the juice of one small orange into a small measuring cup. Add about 1 tablespoon of olive oil. Stir and then pour over the top of the salad just before serving.

Mango Shrimp

1 ripe mango peeled

2 tablespoons of lemon juice

1 pound of large shrimp peeled

1 tablespoon of chicken stock

1 teaspoon of chili powder

¼ teaspoon of hot sauce

1 ½ cups of fresh cut and crushed pineapple

1 cup of chopped tomatoes

1 small red onion chopped

Puree mango with lemon juice in blender. In nonstick frying pan combine shrimp with stock, chili pepper, and hot sauce, and cook, stirring about three minutes. Mix in pineapple, tomatoes, onions. Cook for about 1 minute. Spoon onto plate and drizzle mango sauce on top. Serves 4 at about 207 calories a serving – serve with cooked rice or couscous. For wine try a New Zealand Sauvignon Blanc. Excellent white wine that goes well with seafood.

Non attachment in relationships- Aero*boga

This does not mean that we should have no attachments. It means that we should first respect our own needs so that we have more to give to others. In the best sense nonattachment means we are not fixed into any one position. We are walking the middle way where we realize that we all have our own needs and wants. We recognize our own needs but are also able to tap into a large state of being where we realize that compromise and openness to change brings balance. When two people become too identified with their positions they get polarized and the dance of love comes to a grinding halt. We must learn to be open to the point of view of others, energized with happiness and connected at the pulse of all relationships – the sacral and the heart.



Practice nonattachment – the ability to set aside your wants and needs, see the position of another and reach out with a sense of balance and understanding. The dance of relationship will be full of insight and joy.
