A Recipe for Love – Eat, Throw, Honor


 
 
 
 
 
 
Rice has fed more people and for a longer time than any other crop. Rice has a long history dating back to around 2500 BC as a valuable food and a cultural tradition. Beginning in China and then spreading throughout the world rice was an easy crop to grow due to its versatility and ability to grow in many different climates.

Rice is a cereal crop that feeds more than half the world’s population. It is a good source of energy, good for regulating bowel movements, stabilizing blood sugar and providing a source of B1 to the human body. B1, also known as Thiamin, plays an essential role in the metabolism of carbohydrates. If you increase your daily intake of carbohydrates (and junk food) you need more thiamin in your diet.

The cells of the nervous system are very sensitive to carbohydrate metabolism.  That is why the brain and nerves are the first to show a deficiency in thiamin. Nervousness, constipation, insomnia and headaches may be some of the signs that you need more thiamin in your diet. The richest source is organ meats followed by rice, beans, peas, egg yolks, poultry and fish.

Rice has a long cultural history. In China the word for rice means to eat. In Cambodia a sweet rice dish is offered to the female deity to guard valuable resources.  In Japan it is believe that social harmony is a result of families pooling together resources to grow rice. Eighty-five percent of the farms in Japan grow rice. And did you know that Toyota means “bountiful rice” and Honda means “main rice field”?

The world loves rice. It is traditionally thrown at weddings to symbolize long life and fertility, as well as, lasting love. It is the first dish an Indian woman feeds her husband. Its diversity and cultural influence makes rice a crop for sharing and a crop for love. For what is love, but the ability to give and share with a deep caring for the welfare of another?

Rice resonates with the energy of the earth and the sun. Believing rice to be female in nature, in Asia, rice spirits are honored as mother-type entities.

Rice can be used in spells for blessing, money, prosperity, fertility, protection, rain, wealth, security and to find treasure.

An old superstition claims that certain evil spirits are obsessed with counting. A container of rice near the door will cause any that try to enter the house to be distracted so much by counting the individual grains that they will forget to enter. Keep a jar of rice near your door to distract evil spirits while bringing blessings of prosperity and love to your home!

Eat it, toss it, honor it and  place it by the door; any way you use it, rice and humans have always had a great long love affair.

Intuition- the sixth sense


 
 
 
 
Defined as the “knowing beyond knowing.” We discover, operate based upon a feeling, evaluate, predict and create. This is how we know beyond knowing.  With intuition we generate ideas, get hunches, make predictions and become creative without verifiable facts. It is the opening of the witnessing consciousness. The witnessing consciousness is our ability to separate ourselves from our daily lives (thoughts and actions) and witness our own ability to create and destroy. Life is a constant struggle between creating and destroying. Happiness is a form of creation and anger is a form of destruction for it disturbs our peace of mind. But also remember that negative energy can be created such as hatred. We can also destroy hatred and thereby create peace of mind. Both are important energy forces of life. We just need to learn how to use them in a way that brings us confidence and the ability to listen to our inner voice.

Observe the forces of creation and destruction as they appear in your life. Try to step back and become the witnessing consciousness. Simply observe and know you are the master of your own destiny. Trust yourself.

A Recipe for Happiness – Papaya’s on My Mind











Happiness is defined as a state of mind that is totally up to you to find. No one can give it to you, but a little papaya can help. This versatile fruit is not only delicious to eat, but has many medicinal properties. It is low in calories and high in nutrients.

Papaya contains natural fiber, carotene, vitamin C and essential minerals. Papaya also contain enzymes like arginine and carpain. Arginine is essential for male fertility and carpain is considered to be good for the heart. Throw a little sex into the health benefits and that will make you smile! Happiness is a state of mind.

Papayas are native to Central America and are an important part of the diet throughout Latin America. Spanish and Portuguese explorers brought the papaya back to Europe, as well as, to many other countries including India, the Philippines and Africa. Christopher Columbus called this fruit “the fruit of angels” 

Today the fruit has been cultivated in Hawaii, which is the major United States producers of papayas. Mexico and Puerto Rice also are major players in the papaya game.

Although papaya is rich in Vitamin C, is a natural fiber and contains many other valuable nutrients it is the papain, a remarkable protein-dissolving enzyme that eases many stomach ailments and is an exceptional digestive aid. It can stimulate appetite, as well as, quell that queasy feeling from motion sickness or morning sickness.

Papaya is an excellent fruit for the digestive system. Not only does it help us digest food, but it can relieve indigestion, calm an upset stomach and keep the bowels moving. Because the papain in papaya breaks down the protein fibers in meats, it is often used in restaurants to tenderize meat.

Now when it comes to beauty just pack ripe papaya on your face and let the papain go to work removing acne, dead skin and give you a healthy glow. Many beauty products use papain, but you can make your own facial by simply cutting and blending a ripe papaya and leaving on the skin for about fifteen minutes.

Keeping you healthy, the Vitamin C and vitamin A, which is made in the body from the beta-carotene in papaya, are both needed for the proper functioning of a healthy immune system. Papaya is a great healthy fruit choice for preventing such illnesses as recurrent ear infections, colds and flu.

Papaya has also been shown to improve health functioning, be an anti-inflammatory for rheumatoid arthritis and to help support bone health. It protects against macular degeneration and promotes lung health. Tastes good, is versatile and supports your health from head to toe; happiness is a papaya state of mind!

Your Most Powerful Guide- Intuition


 
 
The sixth chakra (energy center) is the seat of the witnessing consciousness. It is our sense of intuition.

Intuition has been defined as “the immediate knowing of something without conscious reasoning.” It is a sense of power.

One of the functional types of intuition is discovery.  Through verifiable facts we discover certain insights about ourselves. An example would be keeping a journal.

Operative intuition, another functional type is acting or operating based upon a feeling. We get a hunch and act upon it. It might be what we consider good luck. However, the closer we get to spiritual fitness the greater our ability to use operative intuition to witness our modes of operation. We begin to operate on a higher level, receiving messages or urges that lead us to decision that connect us with our higher self.

Intuition is our most powerful sense and the one we trust the least.  So see, hear, taste, touch and smell, and then take a moment to take a breath and listen to your intuition. It is your most powerful guide.

A Recipe for Sex – Hot Green Chili Peppers












Spicy, hot and nutritious, green chili peppers might just be the best aphrodisiac to heat things up in the bedroom. Rich in vitamin C, Vitamin A and lutien, chili peppers are low in fat and high in nutrients.

Chili peppers contain a chemical compound known as capsaicin. Capsaicin and its co-compounds are used in ointments, rubs and tinctures for astringent and analgesic properties. These formulations have been used for arthritis, neuropathic pain and sore muscles. Scientific studies on animals suggest that capsaicin has antibacterial, anti-carcinogenic, analgesic and anti-diabetic properties. It has also been found to lower LDL cholesterol levels in obese people.

Green chilis are red chilies that haven’t been dried. They are soft, but equally as hot and spicy. The chili plant is native to the Central American region where it was used as a spicy ingredient in Mexican cuisines for several thousand years. It was introduced to the rest of the world by Spanish and Portuguese explorers during 16th and 17th centuries and now is grown widely in many parts of the world as an important commercial crop.

Among it’s other nutritional virtues, chilies are rich in Vitamin C; an important water soluble antioxidant. It is required for the synthesis of collagen in the body. Collagen is the main structural protein in the body required for maintaining the integrity of the blood vessels, bones, skin and organs. Regular consumption of Vitamin C helps the body to fight off free radicals and to develop resistance to infectious diseases.

But, it’s the sex benefits of chili peppers that we’re most interested in examining. Heating up the bedroom never tasted so hot!

Hot spicy food improves blood flow all over your body, including the penis, the prostate, the clitoris and other sexual parts. It stimulates nerves throughout your body and can increase physical sensations. Literally it can make sex feel better!

The psychological effects of chili peppers are a popular metaphor for sex.  Just the thought of hot spicy Chili peppers makes us think of better sexual performance and hot arousal. Your mind is used to seeing images of sexual spiciness, so when we eat spicy peppers there’s a good chance we’ll think of sex and get turned on!

Chili Peppers are great for your heart. Chili, jalapeño, and other spicy peppers tend to have the greatest circulatory effects of all fruits and vegetables. Greater circulation equals greater stimulation of the sexual organs. Stimulation leads to sexual activity.

So if circulation and heat are beneficial to sexual health and chilies stimulate circulation by heating things up; chilies must be one of the best “hot and spicy” recipes for sex!.

Taking a Tech Detox – it’s good for the body, the mind and the soul


 
 
 
 
 
 
 
Technology has become overwhelming. Do you know how to step away from your smart phone, emails and text messages, and take a breath? We call it digital detoxing, tech cleanse, personal reboot or just plain switching it off. Whatever you call it; studies show that taking a break is good for the body, the mind and the soul.

 The body -Taking a break can help break some of the chronic musculoskeletal changes that can occur as the result of some of the postures and positions associated with PC use, smartphones and other handheld digital devices. For example, excessive computer use rounds the shoulders forward and brings the arms across in front of the torso. These types of habitual postures and position can lead to chronic back, neck and shoulder pain.

What to do? Take a break. Set time aside each day to turn off the machine and go take a yoga class. Yoga is one of the forms of psychical exercise that works to stretch and strengthen all the muscles of your body. Can’t get to a class? Whether you strive to find enlightenment or not these four keys will help you to find peace and serenity in your daily life.

The first two are to be happy for those who are happy and prosperous. Never be jealous. This will only disturb your peace of mind. Second have compassion and understanding for those who are unhappy; even if the compassion is not received. By simply being compassionate toward those who are unhappy, angry, sad, and less fortunate you will find peace and serenity.

The third is to find delight in virtuous people. When you meet people who are virtuous (a person of high moral and ethical standards) try to imitate them. Don’t envy them or try to pull them down. Try to elevate yourself to their level.  Karma teaches us that we are here to rid ourselves of our vices and gain virtues. These virtues include patience, compassion, commitment, truth, non-violence, non-stealing, non-greed and contentment. Practice these and you will find peace of mind.

Be happy for others, be compassionate for the less fortunate and appreciate virtuous people. Try to lift yourself to their standards. Be compassionate and understanding with everyone you meet. Everyone and everything has the potential to bring you peace and serenity.

Intuition has been defined as “the immediate knowing of something without conscious reasoning.” We all are aware of our sense of intuition and yet it remains so elusive. The process of spiritual fitness is partly about uncovering the nature of this sixth sense. Intuition is further defined as having several functional types.

The first of the functional types of intuition is discovery. It brings about insight and inspiration based upon verifiable facts.  We gather facts and from those facts we intuit or get a feeling about what to do, where to go and how to act.  An example would be keeping a food journal. We gather the facts bases upon observation and this brings certain insights into our behavior patterns. Let’s start with the movement of yoga and yoga dance. Observe your energy and inspire yourself to reach beyond what you think you know and into what you truly know.

To use functional intuition we need to take the time to gather the facts, observe and then quietly sit back and listen to our own inner voice. This is by far the best way to make decisions and to solve problems. So observe your energy and your movement and listen to your inner voice. It will tell you exactly where you should be, where you should go and how to get there.

A Recipe for Health – Just be a little Corny












Think of corn and you probably think of the Native American Indians or the South American Indians and maize or cornmeal. Long before we were eating corn on the cob cornmeal was a staple in the diet of early humans.  For thousands of years before Europeans arrived in the Americas natives were grinding corn into cornmeal.

It was the Indians who taught the first North American settlers how to make cornmeal. It is believed that cornmeal is one of the foods that kept the first settlers alive when they first arrived.

Cornmeal has many uses from making bread, to tamales, grits and something called corn pone. Now corn pone is sometimes a terms used to describe a rural person with little sophistication. Actually corn pone is a thick malleable bread that is cooked in a frying pan over an open fire. Frontiers men cooked this cornmeal concoction. If we delved a little deeper into the health benefits of cornmeal we’ll see that these rural people were no “pones!”

Cornmeal is easy to store and easy to use. By just adding a little butter and water a pancake, flat bread and a cake can be made from cornmeal. During the Aztec rule the peasants lived on cornmeal and beans which provided a complete protein. A gruel made from cornmeal was used to treat diarrhea and other digestive disorders.

Corn is a great source of folate and thiamin or vitamin B1 and B5. Folate is a B vitamin that is known to help prevent birth defects. Folate is also good for cardiovascular health. Folate lowers homocysteine, an amino acid that is a byproduct of the metabolic process. Homocysteine can directly damage blood vessels, so elevated blood levels of this dangerous molecule are an independent risk factor for heart attack, stroke, or peripheral vascular disease. It has been estimated that consumption of 100% of the daily requirement of folate would, by itself, reduce the number of heart attacks suffered by Americans each year by 10%. Folate-rich diets are also associated with a reduced risk of colon cancer.

Corn is also good for lung health because it is rich in beta-cryptoxanthin, an orange-red carotenoid. As well, the thiamin or B1, is necessary for proper brain functioning and memory. This is because thiamin is needed for the synthesis of acetylcholine, a neurotransmitter essential for memory. A lack of acetylcholine has been shown to be a significant contributing factor in age-related impairment of mental functioning such as senility and Alzheimer's disease. In fact, Alzheimer's disease is clinically characterized by a decrease in acetylcholine levels.

In addition to its thiamin, corn is a good source of B5 or pantothenic acid which is an especially valuable B-vitamin when you're under stress since it supports the function of the adrenal glands.

Further it has been discovered that corn meal is a rich source of antioxidants. This all adds up to make corn and cornmeal a healthy inexpensive and versatile food; with no “pone” about it!

The Four Keys to Happiness and Serenity.


 
 
 
The first is -Be happy for those who are happy and prosperous. Never be jealous. Jealousy only disturbs your mind and destroys your happiness.

 The second is-When you see unhappy people; be compassionate.  Perhaps these people are suffering from karma. If you can lend a helping hand, do it. If you can share half a loaf of bread, share it. Be compassionate and by doing that you will always retain peace of mind. Our goal in life is to keep peace and serenity within our own mind. So be compassionate, because even if that compassion does not help others, by being compassionate we help ourselves to find peace and serenity.

Before performing any mental or physical actions you should always reflect upon the consequences. Be happy for the fortunate and compassionate for the unfortunate- in this your mind will be peaceful.  And what is compassion? It is a desire to help and ease another’s burden. Be compassionate.

The sixth chakra or third eye is located between the eyebrows. It controls the pineal and the pituitary glands, the eyes, ears and nose. Its related diseases are colds, sinus problems, and headaches.

 It is the source of the soul and the center of intelligence or subtle mind. It has the ability to pierce the veil of illusion, (our misperceptions) which is the source of our problems. Its battle is the constant struggle between creation and destruction. To transcend is to become the witnessing consciousness.

The witnessing consciousness is where we are able to separate ourselves from our thoughts and actions and witness ourselves without emotion or judgement. It is here we are able to clearly see ourselves and to know which choice is the best for us to make. This is the function of intuition. The closer we get to spiritual fitness the stronger our sense of intuition. It is amazing how intense this form of energy can be when you are in touch with your authentic self.

All of life is a struggle between creation and destruction. Every time something is created, something is destroyed. When you create love you destroy hate. It is the law of nature. Listen quietly to your intuitive self and you will always make the right choice.

A Recipe for Health, Sex, Happiness and Love – Spicy Apple Sauce Cake












The Phoenicians the Egyptians and the Romans did it and so can you- bake a spicy, fruit, and sweet cake full of health, sexuality, happiness and love.

Spray a square or tube baking pan with cooking spray and dust with powder and set aside. Preheat the oven to 350 degrees

Ingredients

¼ cup of buttermilk – if you don’t have butter milk add 1 tablespoon of apple cider vinegar to skim milk

¾ cup of light brown sugar

4 egg whites

Sift together;

2 cups of flour

1 tablespoon of carob powder

1 teaspoon of baking soda

1 teaspoon of cinnamon

1 teaspoon of ground cloves

Set aside:

1 cup of unsweetened apple sauce

½ cup raisins or another dried fruit

1 tablespoon of olive oil and 1 tablespoon of honey

In a bowl combine buttermilk and sugar and mix well. Stir and mix in 4 egg whites. Add the applesauce, olive oil and honey. Gradually add in the flour mixture. Mix well. Stir in the raisins or any other dried fruit that you desire. Also you can add nuts. Mix well, pour into baking pan and cook for 30 minutes or until cake is done. Turn out onto a cooling rack.

And you get health, sex, happiness and love in every bite!

From the sutras (yoga text) Cultivate attitudes of friendliness towards the happy, compassion for the unhappy, delight in the virtuous and disregard towards the wicked. In this you will find peace of mind.

Even if you do nothing else, but apply these to your daily life you will achieve serenity. Everyone wants to be happy. The four keys to happiness are friendliness, compassion, delight and disregard.

Today we are going to focus on friendliness. When you encounter happy and prosperous people be friendly. Do not waste your time being jealous. Jealousy only serves to disturb your mind. Look upon happy fortunate people and wish that comfort for everyone. Make those people your friends and you too will find happiness and prosperity.

 Example : When one country is doing well and  a neighboring country is not there is jealousy and a desire to go to war and take from or ruin the other country. But wouldn’t friendly exchange be a better way? Open up the economic doors, trade with each other and create prosperity for all?

Close your eyes and think of someone you know who is doing very well and who is happy. Bless them.

So when you see happy prosperous people bless them and make them your friends.

Everyone wants happiness- be friendly, remove jealousy and find peace of mind. In this everyone prospers.

Intuition has been defined as “the immediate knowing of something without conscious reasoning.” We all are aware of our sense of intuition and yet it is so elusive. The process of spiritual fitness is partly about uncovering the nature of this sense.

To develop our sense of intuition we must first remove the maya or the veil of illusion that keeps us trapped in the world. This does not mean we stop living in the world. It simply means we learn to see the true reality of our being beyond the illusion the world creates. This means we begin to discover why we are here and when we discover why we are here we begin to shed expectation and judgment. But discovery like everything in life has two sides.

 Intuition is discovered in the sixth chakra or third eye which is located between the brows. It controls the pineal and the pituitary glands, the eyes, ears and nose.  On a physical level when out of balance we experience colds, sinus problems, and headaches.

 It is the source of the spiritual body and the center of intelligence or subtle mind. It has the ability to pierce the veil of illusion (maya), which is the source of our problems. The polarity or two sides of intuition are creation and destruction. To transcend this polarity is to become the witnessing consciousness. The witnessing consciousness is that level of being where we are able to separate ourselves from our thoughts and actions and witness the ability to create and/or destroy. Both are necessary and with intuition we quickly make the right choice. We discover what we need to destroy and what we need to create to achieve spiritual fitness.. The closer we get to our intuitive self the closer we get to spiritual fitness.

 

Spiritual Fitness – listen to your intuition. It is the memory track of your soul. It will guide you through life, if you let it. The closer we get to our intuitive self the closer we get to spiritual fitness.

A Recipe for Love – Dry Me a Raisin










Dried fruit is fruit where the majority of the water has been dehydrated out of the fruit either by the sun or by a dehydrating machine. Dried fruit dates back to the fourth millennium BC in Mesopotamia. It was highly valued for its taste, nutrients and long shelf life. Today the same is true. Nearly half of all the dried fruit sold is raisins. The raisin is considered a traditional dried fruit because it is dried naturally in the sun. Cranberries, blueberries, cherries, strawberries and mango are infused with a sweetener before drying.

The earliest mention of dried fruit goes back to Mesopotamia. Ancient tablets describe recipes for breads and cakes using dried fruit to sweeten. Dried fruit was also part of the Egyptian, Arabic, Roman, Greek and Mediterranean diet. Various recipes mixed dried fruits with spices and honey in breads and cakes 

In ancient China silk, ware and dried fruits were considered costly gifts. And dried fruit was a duty bound gift to a newly-married couple. The symbol of the dried fruit was good wishes for the future marriage. For example the dried  pear symbolized wishes for spouses to be always together, dried apricots meant a wish of success and well-being and as the apricot was a yellow-orange color representing the color of nobility they were a noble gift.. The dried cherry meant wishes for more tenderness in the relations, wishes for a young and youthful spirit and to show a sense of caring about a friend or lover.

The cultivation of grapes began in Armenia and the Eastern regions of the Mediterranean in the 4th century B.C. Raisins were manufactured by burying the grapes in the sand  beneath the desert sun. Quickly drying fruit, using the sun, spread across Northern Africa. The Phoenicians and the Egyptians popularized raisin production most likely because of their ideal climate for drying the grapes. They stored them in jars and allotted them to the temples. They also included raisins in breads and pastries that were made with honey, milk and eggs.

Raisins were highly prized and traded as valuable commodities. Although they are higher in sugar content than non-dried fruit; dried fruits supply plenty of nutrients, fiber and sweetness. Used in breads and and baked goods, sugar can be reduced while getting a supply of vitamins and minerals for bone health, cardiovascular health, oral health, intestinal health, weight management and meeting the standards for a healthy diet.

 In 1754 – George Washington begins his long residence at Mount Vernon. Raisins were a staple at the dinner table. Martha Washington prepared what she called a "plumb broth" made of marrow bones, bread, sugar, raisins, and currants. George proclaims it "the greatest success achieved by Mrs. Washington since our marriage." Now that’s a recipe for love!

An ancient Chinese philosopher once said:

            "Dried fruits are fruit learnt wisdom."

Yoga Today- Pay Attention to Your life


 
 
 
 
 
 
 
Stress and despair affects every one of us. We cannot avoid the stressors of life. Therefore it is important that we pay attention to our day to day activities, our associations and our diets. We should not allow the body-mind to become weak. We cannot come to yoga class and practice yoga, as well as, meditation in one short hour and expect our life to be balanced. We need to take care of ourselves every moment of our life. If we come to yoga with a healthy body-mind, than yoga and meditation will become a compliment to your life.  So let’s take a deep breath, let it go… releasing any stress and emotional turmoil and practice the art of finding balance body, mind and soul. Nothing is achieved without practice.

How do you feel right now? Do you feel a sense of balance and do you feel peaceful? Take this energy with you and apply it to your life. Pay attention to your daily activities, your diet and to your associations and remember to seek balance in all things and in all things find balance.

By far my favorite summer salad is a watercress salad and here is why!


 
 
 
Watercress is actually a weed. But it’s not just any weed. It’s packed with antioxidants. You can find it growing alongside streams and riverbeds in nearly every U.S. state. Although I would suggest you go to your local health food store where you can find it in the produce section.

The health benefits abound. Around 400 BC Hippocrates located the first hospital Kos near a stream so that he could have watercress available for his patience’s. That’s because it is low in calories and high in antioxidants. Watercress is a great source of Vitamin K which helps to strengthen bones and helps to limit neural damage to the brain, which is helpful in treating Alzheimer’s disease.


Watercress is also an excellent source of vitamin C and vitamin A. Vitamin C provides infection-fighting power to stave off colds and flu, as well as, helps to maintain healthy connective tissue and prevents iron deficiency. Vitamin A, also known as retinol, is essential for a properly functioning immune system. It also produces pigments in the retina of the eye. An absence of these pigments can cause night blindness.

Further watercress helps to keep you cellular metabolic functions at peak. This improves the body’s ability to absorb and use calcium and vitamin B-complex.

Watercress both tastes great and is a power pack of essential nutrients making it my favorite summer salad. To the watercress I add avocado for a great source of fiber, potassium, folate and vitamin E. I also add a fresh orange and orange juice to give it a great kick of vitamin C. Then I top it with Hemp seed hearts to add a great dose of omega3! Everything can easily be bought at any health food store.

Here is my simple and easy powerhouse watercress salad recipe!

Watercress Salad

In a bowl grate 1 teaspoon of orange zest and add 3 teaspoons of freshly squeezed orange juice, 1 teaspoon of olive oil and a dash of ground cumin.

Toss trimmed and washed 1 bunch of watercress into the dressing and then arrange on a platter.

Top with slices of one naval orange (peel and pith removed.)

Top with thin slices of avocado.

Sprinkle a tablespoon or two of hemp seed heart on top. (Or use any chopped nut or seed such as chia or flax.)

And my favorite wine to pair with it is Pouilly Fume or Sancerre because of their light crisp flavor.

At about 137 calories a serving and with a powerhouse of nutrients watercress salad is my favorite summer salad!

Fulfillment comes as a result of exercising the creative aspect of you. This creative aspect comes about when you experience the freedom of choice. Freedom is simply being able to take that giant leap of faith, knowing that whatever will be is simply the journey of your life. We cannot control the outcome of our choices. This is what freedom is all about. It is a disregard for the outcome. That does not mean we do not have a conscience and that we don’t care whether we hurt others or not, but simply that we know whatever the outcome it is the best and highest choice for us. This is our intuitive nature, which comes in many forms. It is the opening and balancing of the fifth and sixth chakras.

How do we learn to listen to our inner voice? Be still, be quiet and if you feel strength, conviction and peace you’ll know what to do and the right way to go.

A Recipe for Happiness – Not a Carob in the World












Carob is actually a legume often times used as a substitute for chocolate. Carob is naturally sweeter than chocolate, but not as flavorful. However, it has many attributes that make it a good alternative to using cocoa.

For one, it does not contain caffeine and two, it is sweeter so less sugar is needed in recipes when using carob.  In addition to not having the negative effects of chocolate, carob is very nutritious. Carob contains as much Vitamin B1 as asparagus or strawberries; as much niacin as lima beans, lentils, or peas; and more Vitamin A than eggplant, asparagus, and beets. It also contains Vitamin B2, calcium, magnesium, potassium, and the trace minerals iron, manganese, chromium, copper, and nickel. It contains approximately 8 percent protein and is a good source of fiber. Compared to chocolate, carob is three times richer in calcium, has one third less calories and seventeen times less fat. I’m starting to like this stuff!

Carob is an alkaline food. The Ph or chemistry of your body, for ideal health should be 80% alkaline and 20% acidic. Foods influence the chemistry of your body. Carob is also low in fat, helps to stabilize blood sugar, good for teeth and gums and free from stimulants such as caffeine.

Carob has a long history dating back over 5000 years. It still plays an important part in Jewish tradition and is used widely throughout Europe and the Middle East. The Spaniards carried carob to Mexico and South America and the British took carob to South Africa, India and Australia. Carob was introduced into the United States in the 1800s with California becoming the area of the country that grows carob. However, the crop has not been very successful. Most of the carob we consume comes from the Mediterranean.

The seeds themselves have a long history. The seed looks very much like a large watermelon seed. There are about eight seeds to a pod. The gum they contain was used and is still used today by the Egyptians for binding their mummies.

The Italians use the seed to make rosary beads. In Israel they have an annual Carob Festival. This seed was also used as a weight measure for gold and gems because seeds are very even in weight.

The word carat, which is still used today to measure gold and diamonds, comes from the Arabic name for the carob seeds because of their uniformity in weight.

 Today, we also use carob in cosmetics, pharmaceuticals and for food thickening.

Big carats make some girls happy. But the carob that is fat free, high in nutrients and a third less calories than chocolate makes all girls real happy!
