A Yoga Moment


In the yogic tradition OM is the symbol of reality and the sound of eternal peace. This is the time of year when most people stop to wish each other a happy and peaceful holiday season.  When I was a child I believed that the whole world was at peace on Christmas Eve. Growing up in an isolated Christian based community I knew little about the outside world. To me the world celebrated the symbol of Christ which was peace on earth and good will towards all. It was the one night that everyone, everywhere was at peace. When I grew up I realized that this was not true. There are many beliefs and many times a year when different cultures celebrate and honor their chosen following. But I still think it would be wonderful if the whole world could come together on one day and celebrate humankind as one, wishing for peace on earth and good will towards all humankind.

The mantra AUM is the mother of all sounds. It is Om, it is Amen and it is the sound of all blessings. When it reveals itself, introspection is attained and obstacles are removed. And what is the quickest way to establishing peace on earth? A little introspection into the nature of life and removing the prejudice obstacles that stands in our way and keeps us from becoming one. To everyone…Ommmmm may you enjoy health, happiness and peace not just for the Holidays, but for all the days to come.

What five foods can help you to reduce belly fat? Plus a Holiday Drink Recipe that will warm the soul, nourish the body and please the mind!

Santa may be a little chubby in the middle, but you can reduce your belly fat and improve health with these five foods. All of these foods are high in MUFA- monounsaturated fatty acids- these fatty acids are healthy fats that should be added to a healthy diet. Avoiding unhealthy fats and empty carbohydrates along with adding these five foods and remembering the acronym SED: Strength training to preserve muscle mass, Exercise aerobically to burn fat, and your Diet should be healthy, calorie-controlled, which includes heart-healthy fats,will bring belly fat under control. MUFAs are not a silver bullet, but rather healthy fats that fill you up especially if you are on a calorie reducing diet. One of the real struggles most people have with a diet is removing fat. They feel deprived and hungry so by adding healthy fats we can reduce unhealthy snacks and empty calories. Try adding these five to your diet:

1.       Oils – olive. Peanut, safflower, sesame. Walnut, soybean and canola – 1 tablespoon a day

2.       Nuts and seeds – almonds, brazil nuts, peanuts, sunflower seeds, hazelnuts, pecans, pine nuts, sesame and pistachio( fresh not roasted)

3.       Avocado ¼ cup

4.       Olives – 10 large or 2 tablespoons of tapenade

5.       Dark Chocolate ¼ cup

Here is a Spirited Orange Chocolate drink that is healthy, full of love, under 100 calories and great for the Holidays!

1-      12  ounce coffee mug     

2 tablespoons of dark cocoa mix in a 12 ounce cup of hot water.( I used Essential Living chocolate mix – can be found at the health food store) Mix well. Add a splash (1-2 tablespoon) of Grand Marquette or Patron orange Liquor (can be found at BevMO –in stores and online). Shave about 1 teaspoon of 85% dark organic chocolate and 1 teaspoon of grated fresh orange skin and sprinkle both on top of the cocoa… enjoy!

For a party – use 2 tablespoons of cocoa per 12 ounces of water and make a carafe, coffee pot full of the cocoa mix. Serve in small espresso cups with chocolate and orange grated on top and a side of vanilla biscotti.

For non-alcohol add a tablespoon of fresh squeezed orange juice to the hot cocoa mix.

Tips for a Slimmer T-Day Dinner

Mashed potatoes are so easy to overeat. No cutting and no chewing and if you pile on butter and gravy well you add a lot of unneeded calories. How about a little black peeper on top to replace the butter and gravy? Chives or parsley spirinkled on top also gives them zet with out adding calories. And if you want to skip the potaoes and try a great "mock" massed potaoes here's a a recipe from my book - saves you about 200 calories

Cauliflower/ Mocked Mashed Potatoes

Ingredients:

·         1 medium head of cauliflower

·         1 pkg. instant chicken broth

·         1/8 tsp. pepper

·         1 Tbsp. onion flakes

Directions:

Cook cauliflower in water until very tender. Place cauliflower and remaining ingredients in a food processor. Process until pureed.

Place mixture in a 1 ½ quart baking dish that has been sprayed with non-stick spray. Bake at 375 degrees for 10 minutes uncovered.

Tips for a Slimmer T-Day Dinner


Don’t Stuff Yourself

Did you know the average serving of stuffing is about 447 calories? You can cut it in half and still have a great tasting stuffing by following a few tips.

Sauté  2 cups of diced fennel and one onion in olive oil. Add chopped mushrooms and sauté until soft. Stir in 2 teaspoons each of chopped sage and thyme and 1 teaspoon of chopped rosemary. Stir in 1 stale diced whole wheat baguette and about 4 cups of cornbread cut into cubes. Chop 2 apples and add with 1 can of reduced fat vegetable broth. Add ½ cup of raw chopped pecans, 1/3 cup of chopped parsley and a little salt and peeper to taste. Mix well. Coat a 9 inch pan with non fat vegetable spray. Place stuffing in the pan and bake for 20 minutes or until slightly crisp on top.

Calories -203 per serving! You just saved over 200 calories. Looks like our 3000 calorie T - Day dinner is now at about 2400 calories.

Tips for a Slimmer T-Day Dinner

Go Green! Did you know green is the most abundant color on earth and that green is the balancing color when it comes to the chakras? It is the color associated with the heart. When it comes to watching your weight - go green! Start by filling your plate with the festive food that is green. You'll be piling on lots of veggies and salad. This leaves less room on the plate for the carbs and the fat.
Saute your veggies in a little olive oil and sprinkle with herbs such as parsly, oregano and sage. Balsamic vinegar is a great way to dress them up without adding calories.

A recipe for Love - Think Green ( see recipe below)

Green is the color, according to color therapist and yogis, that is associated with the heart chakra. It both supports heart health and is the energy center for love. The color green is a neutralizing balancing and centering color. Connected to the heart chakra the color green is the quality of air, openness, expansiveness and unconditional love.

The color green in fruits and vegetables is a mark of nutrients rich vitamin and minerals. Darker and richer greens such as that found in kale is a great source of calcium and other essential vitamins and minerals. Kale is also a great antioxidant vegetable with beta carotene, vitamin K and lutien making it a great source for heart health.

Kale is much milder in flavor than collard greens but equally as nutrious. The minerals in kale have been shown to help the liver detoxify the body and to help to prevent cancer. Although often times used as a garnish kale makes a wonderful side dish.

Kale like all of the cabbage family is easy to grow and survives in cold and harsh conditions. It’s a hearty food that for many years was considered a “poor man’s food”. Thankfully today chefs are beginning to appreciate the nutritional value of kale. It is low in calories, low in fat and high in vitamins and minerals making it an ideal food for those watching their weight and supporting their health.

Love sometimes comes in a funny form. The cabbage family is not necessarily the prettiest of vegetables and it’s rather bitter and strong taste can be “off putting”. But it’s nutritional value cannot be denied. Sometimes those things that look the least lovable are the most giving and supporting of all.

Kale like love, sometimes must endure harsh conditions in order to flower and grow. Its presence can be bitter sweet. However, love is more than just the attraction to something exciting and new. Love is something that grows and gives with an eye to health and well being. We worry about those we love and we make every effort to see that they are cared for and nourished in body, mind and soul.

 Now I can’t say I’ve always been in love with Kale. For years it was a garnish to me but then suddenly I discovered its rich dark slightly bitter taste and its rich nutritional value. Sometimes it takes maturing a bit, experiencing a bit and opening up to new possibilities that allows a healthy love to enter your life. Hail to kale!

 
Side dish Sautéed kale
In a medium size pan add two tablespoons of olive oil and 1 clove of finely mined garlic. Heat and stir until garlic is slightly brown. Toss in about a cup of sliced celery and stir for a few minutes. Toss in the kale and stir gentle until the kale just starts to become limp.

Tips for a Slimmer T-Day Dinner


When it comes to the turkey say good bye to the thighs! The dark meat has almost twice the amount of fat as the breast meat.

Turkey breasts and thighs vary moderately when it comes to calories. A 3-ounce serving of breasts contains 170 calories, while this same amount of thigh contains 210 calories. In similar fashion to carb content, the calories will change if you apply some form of sauce or topping to the turkey. Skip teh gravy – it’s just fat and white flour. Here’s a hint – if you brine the turkey before cooking it will be juicy and not need any gravy! Gravy equals about 100 calories a serving and it’s mostly sodium.

Yo just saved about 150 calories! We’re down to about 2600 calories and dropping! Remember it’s important to plan ahead! And for a juicier turkey - brine it! See brinng below.

How to brine a turkey from my favorite chef Alton Brown

  • 1 (14 to 16 pound) frozen young turkey

For the brine:


  • 1 cup kosher salt
  • 1/2 cup light brown sugar
  • 1 gallon vegetable stock
  • 1 tablespoon black peppercorns
  • 1 1/2 teaspoons allspice berries
  • 1 1/2 teaspoons chopped candied ginger
  • 1 gallon heavily iced water

For the aromatics:


  • 1 red apple, sliced
  • 1/2 onion, sliced
  • 1 cinnamon stick
  • 1 cup water
  • 4 sprigs rosemary
  • 6 leaves sage
  • Canola oil

Directions

2 to 3 days before roasting:

Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.

Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate.

Early on the day or the night before you'd like to eat:

Combine the brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining.

Preheat the oven to 500 degrees F. Remove the bird from brine and rinse inside and out with cold water. Discard the brine.

Place the bird on roasting rack inside a half sheet pan and pat dry with paper towels.

Combine the apple, onion, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.

Roast the turkey on lowest level of the oven at 500 degrees F for 30 minutes. Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees F. Set the thermometer alarm (if available) to 161 degrees F. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let the turkey rest, loosely covered with foil or a large mixing bowl for 15 minutes before carving.

Tips for a Slimmer T-Day Dinner


Skip the cranberry sauce. A half cup serving has the equvaliant of a candy bar's worth of sugar. Fresh cranberries are low calorie and high in fiber. Here is my favorite recipe. Make it  head. If you are going as a guest offer to bring it.
Thanksgivng dinner is now about 100 calories lighter! With pumpkin pie as your dessert choice the 3000 calorie meal is now down to 2750. Stay with me for more tips to a slimmer T-day dinner!

Cranberry Orange Relish

Ingredients:

·         1 12oz. bag of cranberries

·         4 oranges cut off ends and slice with peels still on

·        ONE packet of Stevia(herbal sweetener) or 1 tablespoon of sugar
Add a handfull of shelled halved walnuts

Directions:

Place all ingredients in a food processor, chop well and chill for 24 hours. Place on top of fresh parsley for decoration.

May be stored in refrigerator for up to 2 weeks.

Eating tips from healthy skinny chicks


– skinny chicks, no matter what they tell you, don’t eat whatever they want, exercise very little and stay slim. What they do is exercise every day and use a few eating tips that cut calories without cutting out the food they enjoy. Here is a couple of my favorite.

Green tea- ups metabolism

 Dark Chocolate- a healthy sweet that also increases you metabolism

Wine- piceatannol a compound your body makes when you drink wine could stunt fat cells – says Journal of Biological Chemistry but remember that’s one glass on wine not the whole bottle!

NO PLEASE don’t pass the bread and butter- extra wasted calories

Salad first and lots of it with dressing on the side- dip your fork in the dressing and then spear some salad- 

Water, coffee, tea, but never juice or soda- stay hydrated without extra sugar

Eat your fruit don’t drink it- takes longer and you get lots of fiber to help fill you up

 Eat soup-A study out of Penn State showed that soup eater end up weighing less than non-soup eaters

Portion control - did you know you can eat anything you like if you use portion control – moderation! It’s not what you eat but how much you eat that counts.

 Healthy Skinny chicks also exercise daily, laugh, love and have lots of fun!

A Recipe for Sex -- French Kiss

The French are known for many things among them the French kiss. It was the Greeks and Greek mythology that first invented the kiss of the tongues. Zeus became angry with Erato the muse of love and poetry and punished her by forcing her to kiss all men that she met with the tip of her tongue.  This wa a punishment that she distasted. Eventually she met and fell in love with a man who she lovingly kissed with the tip of her tongue. When their tongues met their souls were kissed. The French perfected this kiss and called it the “soul” kiss. Leave it to the French to drop themselves of the puritanical burden and perfect the art of a sexy kiss.

Besides French kissing and Paris, the French have Provence located in Southeastern France. It is home to many herbs among them lavender, thyme, basil and fennel. These herbs were picked fresh from the garden and used in cooking stews and to season meats and fish.

In the 11th and 12th Century, known as the Golden Age in Provence the troubadours broke away from the Latin influence and began to compose love songs and poetry of their own. The most famous troubadour was Folquet de Marseille whose love songs were famous throughout Europe and who was praised by Danti in the Divine Comedy.

Provence has always attracted writers and artist such as Edith Wharton, Summerset Maugham, F. Scott Fitzgerald, Cézanne, Renoir and Matisse.

The cuisine of Provence is a result of the warm Mediterranean climate although the terrain is rugged making it difficult to grow produce. Hearty vegetables, goats, cheeses and fish are stables of the diet. Bouillabaisse and ratatouille come from Provence.

The native drink is Pastis, liquor that is flavored with anise. But what does this all have to do with sex and French kissing? Just smell the fragrant air with blossoming herbs of thyme, basil, fennel and lavender. Each scent relaxes, invites and excites the senses. That’s why the French created Herbs de Provence, a mixture of these aromatic herbs to tempt the body, the mind and the soul. They touch the body with nutrients such as the B-complex and vitamins A, C, and D all known to support a healthy sex system. Fennel has been used to increase the libido in both men and women. Basil was used as a dusting powder to attract lovers because of its erotic scent.

 All of these herbs, basil, thyme, fennel and lavender belong to the Labiatae family Labiatae herbs are culinary which indicate their affinity for digestive processes. The scent of these wonderful herbs is invigorating, stimulating, fiery and reawakening; making them an excellent combination for stimulating the sexual urges.

Herbs and their essence touch the soul in the same way a French kiss excites the tip of the tongue with a subtle force that brings the art of cuisine and love making to perfection.

So you need to commit to 30 minutes a day. This can be walking, jogging, spinning or dancing. Halloween HealthyChocolateTreat Recipe only 75 calories


A Recipe for Health, Sex, Happiness and Love all wrapped in one!

I’ve been invited to a party and asked to bring a dessert so it’s a good excuse to make something form the cookbook that I haven’t made in years. Indulge me if you will as we explore how these little morsels can delight us with health, sex, happiness an love.

When it comes to health, cocoa springs to the top of the list. By now we all know that the coca bean is a rich source of antioxidants. Antioxidants are scavengers that seek out and destroy rfre radicals that circulate in our body and do damage to our cells. Now it’s the pure coca that is the good stuff and not the commercial chocolate that is mostly sugar, cream and additives. Cocoa is very bitter and so we add sugar to most recipes to sweeten it. Don’t cringe from the sugar. A little sugar in pure form added to home baked desserts is not a “bad” thing. Sugar becomes a “bad” thing when we eat it commercially in sodas and baked goods that are made of preservatives and processed foodstuff.

In fact the World Health Organization did several studies that show it s not the sugar that is the problem when it comes to obesity, diabetes and tooth decay, but rather the amount of soft drinks and junk food we consume. Of course, sugar usually is associated with rich desserts and candy and overindulging in both of those can led to health problems. The key with sugar is moderation.

Now when it comes to sex pure cocoa can be a tempting aphrodisiac. Pure cocoa has been found to contain a substance called phenythylamine or PEA, which is the same peptide that the body produces when it gets that rush of affectionate feelings. Pea is an amphetamine like bio- chemistry rush that causes humans to get excited. But, remember when we talk about cocoa being an aphrodisiac we’re talking about the real stuff. Adding rich dark coca to foods may give a mild jolt of excitement.

Crème de cocoa is mixture of cocoa, vanilla and liquor. Although it is used as an after dinner drink it is also used in baking desserts. In the early 19th century, a recipe for making chocolate liquor features cacao beans, vanilla, vodka and simple syrup. Glycerin may have been added to keep the extract suspended and to make the liquor thicker. If we mix a little chocolate, vanilla and liquor together, it’s sure to get a smile. After a great meal a cordial of crème de coca can make one feel quite happy.

One of the symbols of love is a box of chocolates. It is aid that a young man brings young woman chocolates so that he might partake of her affection. A box of heart shaped chocolates on Valentine’s Day is a sure fired symbol of love. And of course there are those who love chocolate and must have their daily fix of this sinful delight. If you sweeten it with sugar and a little cinnamon it leads to sugar and spice and something nice and that is what love is made of…or so they say.

I’ll add little Neufchatel cheese – the light healthy French version of cream cheeses and make my little desserts to take to a summer backyard party where we will indulge in something healthy, sexy, happy and loving.

Chocolate Cheesecake Cups

What you’ll need to make about 30 small cupcakes

Two  - one dozen small size cupcake pans 

Cup cake liners - small

1 8ounce package of Neufchatel cheese ( can use light cream cheese)

½ cup sugar

½ cup low-cal or nonfat cottage cheese

2 tablespoons of flour

2 tablespoons of cocoa

3 tablespoons of crème de cocoa – Godiva Chocolate liquor – Bailey’s Irish crème or Crème de Menthe

½ tsp vanilla extract

2 egg whites

Chocolate chip morsels

Place first 8 ingredients in food processor and blend. Spoon into paper lines cupcake tin. Fill half full. Top with 3-4 chocolate chips. Bake at 300 degrees for 20 minutes. Cool on rack and then chill for at least 2 hours. Freeze if you like and serve as a frozen cupcake – taste like a chocolate ice cream!

Yields 1 dozen at approximately 75 calories a piece. Now that’s a health, sexy, happy, loving, sweet indulgence!

Create

So Pluto got into trouble because he was so infatuated with mintha.  Seems that Mintha or better known as mint is a mild stimualant that is good for the digestive system and will sightly increase your metabolism. It's all about what we focus on that brings about results.

Diets fail because we only attempt to correct the problem on the physical level.  We neglect the real issue which is found in the mental and spiritual relm. Affirmations don't work becasue we don't go to the spiritual level and examine closely just what is holding us back from showing up and fully participating in life. Anyone who has achieved will tell you it came from a spiritual push. It is an energy much more powerful than the body-mind. Create!

 Peas with Mint

A great side dish that is both healthy and sexy. Peas are one of the most nutritious leguminous vegetable, rich in health benefiting phyto-nutrients, minerals, vitamins and anti-oxidants. Add a little mint for arousal and you’ve got a great healthy and sexy side dish!

 

Sauté in a rounded tablespoon of butter thinly sliced onion rings. When onion is soft add 2 tablespoons of water and one cup of fresh peas. Sauté until peas are tender. Remove from heat and toss in several small sprigs of fresh mint. Serve warm. No wonder Pluto fell in love with Mintha!

Because Life becomes what life does

This is a new series of blog post. It's about motivation, achievement and success. In any endeavor there are certain ingredients that are required if we are to succeed. Like everyone else I have failed and succeeded. My failures have been valuable lessons. My successes have come after much work, sacrafice and devotion. But like most people I have not always appreciated my successes but, rather tended to focus on my failures. We are afterall our most ardent critics.

We tend to measure our success by the accummulation of things, praises, honors and attention. When success comes without material respresentation we forget the true nature of success. It lies deep within our abilty to be happy and at peace. It lies at the depth of self worth and self esteem. That is why many people accummulate large masses of wealth and still find themselves unhappy. It is not success they have achieved but, the amassing of stuff to compensate for a lack of worth. No amount of wealth can bring you worth.

One of the biggest forms of failure is the diet industry. Diet programs promise us quick loss, happiness and success. It is a $10 Billion a year business, resulting in a 95% failure rate. Why? The deprivation factor and that is exactly the reason most endeavors fail. We feel deprived of time, energy, fun and play. To succeed at anything means to committ, work and focus on the end goal. It means to continue even when the going gets rough.

I wrote the Twelve Lessons for success and then recorded them on an audio CD. Contained within is teh formula and the steps that will lead to success no matter what the endeavor. Here is the first secret; consistancy and persistancy. If applied will lead to success. The problem is we as humans have a tendnecy to give up as soon as the going gets rough or we feel deprived. By nature we want life to be easy. You cannot succeed without working. It is the basic law of Karma - you reap what you sow.
What is needed is an integrated approach where body, mind and spirit work together. Integration is a conscious approach to the choices we make. Our choices are actually a reflection of the connection we hold with our spiritual self. The flesh is weak and the mind is so easily untamed. The spirit moves mountains. So perhaps we need to look at the spiritual componant before embarking upon another diet plan, another business plan or any other plan that promises physical gratification at the cost of emotional and spiritual harmony and bliss. In the spiritual realm one is never deprived...to be continued.

Camponata

When we think camponata we think Sicily. After returning from Sicily I decide to entertain my friends with an antipasto and wine afternoon featuring camponata. Here is the secret to a good camponata...the main ingredient is eggplant. You need to fry them lightly so to make sure the oil is hot enough. One lonely eggplant slice is dropped into the pan and you wait for it to begin to sizzle before you add the main stock to be lightly fried. Give up one slice for the pot! You don't want any one ingredient to get lost nor do you want anyone ingredient to over power the rest. There needs to be the right balance and the right blend and that is the secret to a great camponata. Just like life - the right balance and the right blend and you have greatness!

ASuccessful Life

A Successful Life – To Appreciate Beauty – and so it has been said beauty is in the eye of the beholder. Or as Yogis put it – you and you alone bring the beauty to the sunrise and the sunset.  I live in Los Angles where beauty is seen as a trademark of success. But the superficial, stereotypical beauty is not what I see around me every day.  When I teach my yoga classes I meet and share time with some of the most beautiful people in the world.  Their smiles, eyes, complexions, hair, movements and laughter are the most beautiful parts of my day. I live in the city where the beauty of nature can be hard to find but, the same sun rises and the same sun sets every day and every day I marvel at the beauty of the world to wake up and go to sleep with such precision while coloring the sky with a blaze of orange, pink and yellow. Beauty is in the eyes of the beholder and can be found anywhere and anytime.  It does not have a fixed definition. It is up to you to define it. What do you see as beauty today?

There is very poor if any Internet connection here in Ragusa. The village is very old and very quiet. It is like stepping back in time. The manager of our hotel wants mr to get him job in America so his son can be born in America. As bad as it may seem everybody still wants to go to America.

Shoes

It is Wednesday. We leave on Saturday and the shoes I ordered for the trip arrived and are too small. Ran to norstroms and only have them on line. Takes 5 days to get them. Went home and went to zappo who made me a VIP and will ship them and have them to me by Friday. Wow! I am now a zappo fan.

Italy Count Down

Only four days until we leave for Italy. I am packed, organized and with most of my work done.  There is always things that won't get done and snafus that happen.  Like my husband contracted a flesh eating bacteria and is now on antibiotics to clear it up so we can travel. Surprisingly this is a common event but, still very serious. So four days to go we are watching our health and ready to embark upon another adventure. A couple of quick lunches with friends, last minute shopping for a good pair of walking shoes, last minute work details and off we go.

Want a healthy sexy dessert for Valentine’s Day?

Baked Apples

Apples are known as a great digestive aid as well as for their healthy nutrient content. Apples contain more vitamin G (the “appetite vitamin” promotes digestion and growth) than almost any other fruit.

Cinnamon, nutmeg and vanilla are known for their aphrodisiac qualities; mostly due to the warming of the circulation system. It takes good digestion of good nutrients and proper circulation to keep the sex juices flowing and the body-mind healthy. So if you want to be healthy and sexy this Valentine ’s Day try baking apples for dessert.

Ingredients: for 2

½ teaspoon of cinnamon

¼ teaspoon of nutmeg

¼ cup of raw sugar (use Stevia if you want to reduce calories)

1 tablespoon of cold butter cut in pieces

½ cup apple juice

2 medium size apples

1 vanilla bean cut into two pieces

Preheat over to 325

Combine cinnamon, nutmeg and sugar in small bowl and set aside. Core the two apples and remove the skin from around ½ inched at the opening of the cored apples. Fill each cavity with the sugar and spice mixture. Top with ½ of the vanilla bean. Top each apple with half the tablespoon of butter. Place the apples in a baking dish and pour the apple juice around then. Cover the pan with aluminum foil and bake for approximately 45 minutes. Remove from the pan and serve warm with a side of vanilla ice cream.

Bake your Honey a Honey Cake

Did you know that honey is an aphrodisiac? Honey is a complete food used throughout history for its ability to supply energy and nutrients. When tested against other foods it ranked number one for sustaining performance and quick recovery. Sounds like an aphrodisiac to me!  So how about a honey cake for your honey sprinkled with aphrodisiacs spices and erotic wine for Valentine’s Day?

Honey Cake

Serving honey is an ancient way of honoring guests.

1/2 cup of honey

1/2 cup of Strega wine (or any sweet white wine, but Strega is best)                 

5 egg yolks

7 egg whites

1½ teaspoons of salt

1 tablespoon of grated orange peel

1/2 cup plus 2 tablespoons olive oil

1 cup whole wheat flour

1/2 teaspoon each of cinnamon, cloves,

      and nutmeg

Preheat oven to 375 degrees.

Line the bottom of an 8-inch spring-form pan with oiled parchment or a brown paper bag cut to size. Oil the pan and paper well.

 Whisk egg yolks with honey for five minutes. Add orange peel. Sift flour with salt and spices. Gradually stir into egg yolks and honey mixture. Add wine and olive oil, stirring constantly as you add small amounts. Beat the egg whites until stiff and then fold into batter. Pour batter into pan and bake for 20 minutes. Turn oven off and let cake sit for 10 minutes. Remove cake from oven. Turnover and detach from spring pan carefully.

Sprinkle top with a mixture of cinnamon and ground dark chocolate. Serve with a side of orange sorbet.
