A Recipe for Health, Sex, Happiness and Love all wrapped in one!

I’ve been invited to a party and asked to bring a dessert so it’s a good excuse to make something form the cookbook that I haven’t made in years. Indulge me if you will as we explore how these little morsels can delight us with health, sex, happiness an love.

When it comes to health, cocoa springs to the top of the list. By now we all know that the coca bean is a rich source of antioxidants. Antioxidants are scavengers that seek out and destroy rfre radicals that circulate in our body and do damage to our cells. Now it’s the pure coca that is the good stuff and not the commercial chocolate that is mostly sugar, cream and additives. Cocoa is very bitter and so we add sugar to most recipes to sweeten it. Don’t cringe from the sugar. A little sugar in pure form added to home baked desserts is not a “bad” thing. Sugar becomes a “bad” thing when we eat it commercially in sodas and baked goods that are made of preservatives and processed foodstuff.

In fact the World Health Organization did several studies that show it s not the sugar that is the problem when it comes to obesity, diabetes and tooth decay, but rather the amount of soft drinks and junk food we consume. Of course, sugar usually is associated with rich desserts and candy and overindulging in both of those can led to health problems. The key with sugar is moderation.

Now when it comes to sex pure cocoa can be a tempting aphrodisiac. Pure cocoa has been found to contain a substance called phenythylamine or PEA, which is the same peptide that the body produces when it gets that rush of affectionate feelings. Pea is an amphetamine like bio- chemistry rush that causes humans to get excited. But, remember when we talk about cocoa being an aphrodisiac we’re talking about the real stuff. Adding rich dark coca to foods may give a mild jolt of excitement.

Crème de cocoa is mixture of cocoa, vanilla and liquor. Although it is used as an after dinner drink it is also used in baking desserts. In the early 19th century, a recipe for making chocolate liquor features cacao beans, vanilla, vodka and simple syrup. Glycerin may have been added to keep the extract suspended and to make the liquor thicker. If we mix a little chocolate, vanilla and liquor together, it’s sure to get a smile. After a great meal a cordial of crème de coca can make one feel quite happy.

One of the symbols of love is a box of chocolates. It is aid that a young man brings young woman chocolates so that he might partake of her affection. A box of heart shaped chocolates on Valentine’s Day is a sure fired symbol of love. And of course there are those who love chocolate and must have their daily fix of this sinful delight. If you sweeten it with sugar and a little cinnamon it leads to sugar and spice and something nice and that is what love is made of…or so they say.

I’ll add little Neufchatel cheese – the light healthy French version of cream cheeses and make my little desserts to take to a summer backyard party where we will indulge in something healthy, sexy, happy and loving.

Chocolate Cheesecake Cups

What you’ll need to make about 30 small cupcakes

Two  - one dozen small size cupcake pans 

Cup cake liners - small

1 8ounce package of Neufchatel cheese ( can use light cream cheese)

½ cup sugar

½ cup low-cal or nonfat cottage cheese

2 tablespoons of flour

2 tablespoons of cocoa

3 tablespoons of crème de cocoa – Godiva Chocolate liquor – Bailey’s Irish crème or Crème de Menthe

½ tsp vanilla extract

2 egg whites

Chocolate chip morsels

Place first 8 ingredients in food processor and blend. Spoon into paper lines cupcake tin. Fill half full. Top with 3-4 chocolate chips. Bake at 300 degrees for 20 minutes. Cool on rack and then chill for at least 2 hours. Freeze if you like and serve as a frozen cupcake – taste like a chocolate ice cream!

Yields 1 dozen at approximately 75 calories a piece. Now that’s a health, sexy, happy, loving, sweet indulgence!
